Prepelita in vin

6 portii - 55 min (15 min preparare)

Ingrediente

  • 1/2 cana untura sau alta grasime
  • 2 cepe mici, curatate si taiate marunt
  • 2 cuisoare
  • 1 lingurita boabe de piper
  • 2 catei de usturoi, curatati si taiati marunt
  • 1/2 frunza de dafin
  • 6 prepelite, curatate
  • 2 cani vin alb (Chardonnay, Pinot Grigio, sau Sauvignon Blanc)
  • 1/2 lingurita sare
  • 1/8 lingurita piper
  • 1 virf de cutit de cayenne
  • 1 lingurita ceapa verde taiata marunt
  • 2 cani smantana

Se pune untura la prajit; se adauga ceapa, cuisoarele, usturoiul si frunza de dafin; se prajesc cateva minute.
Se adauga prepelita si se prajeste pe toate partile.
Se adauga vinul, sarea, piperul, cayenne si ceapa verde; se fierbe pana cand carnea e frageda, aproximativ 30 min.
Se scoate carnea si se pastreaza intr-un vas fierbinte.
Se strecoara sosul; se adauga smantana si se lasa pana incepe sa fiarba.
Se adauga sosul peste carne.

Ingredients

  • 1/2 cup lard or other fat
  • 2 small onions, peeled and minced
  • 2 whole cloves
  • 1 teaspoon peppercorns
  • 2 garlic cloves, peeled and minced
  • 1/2 bay leaf
  • 6 quail, cleaned and trussed
  • 2 cups white wine (Chardonnay, Pinot Grigio, or Sauvignon Blanc)
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground pepper
  • 1 pinch cayenne
  • 1 teaspoon chives, minced
  • 2 cups cream

Melt fat; add onions, cloves, peppercorns, garlic and bay leaf and cook for several minutes.
Add quail and brown on all sides.
Add wine, salt, pepper, cayenne and chives; simmer until tender, about 30 minutes.
Remove quail to hot serving dish.
Strain sauce; add cream and heat to boiling point.
Pour sauce over quail.
